Easy, Healthy Pomegranate Guacamole

Thinking about taking some chips and guacamole to that party?  Take a good look at the ingredients before you buy a commercial "guacamole dip."  Some of them contain less than 2% avocado!  That's just wrong.   Instead, try whipping up this simple homemade guac with a twist - pomegranate.



Guacamole is super simple to make and the pomegranate seeds add little pops of sweetness and a punch of antioxidants that take this vegan dip to the next level. 

CAUTION: If you are not used to working with pomegranates be careful, the juice will stain very quickly!  Some stores carry pomegranate seeds which will some you some work, so keep your eyes out for those.  

If you want a more traditional guacamole, omit the pomegranate seeds and add some chopped jalapeno for some heat. 



Ingredients:
4 ripe Hass avocados (the smaller, darker ones) 
1 white onion, chopped
Juice of 2 limes
3/4 tsp. salt
3/4 cup pomegranate seeds (about 1 pomegranate's worth)
1/2 cup chopped cilantro



Directions:
1) First, roll the limes on the counter applying pressure with the palm of your hand.  This will make them easier to juice.  Then halve, pit, peel, and mash the avocados in a large bowl, adding the lime juice as you mash. 
2) Add the onion and salt and mix well. 
3) Mix in the pomegranate seeds and cilantro. 
4) Do a quick taste test and make any needed adjustments.  Serve and enjoy!
