How to Meal Plan Like a Pro




It IS possible to cook delicious, healthy and affordable meals at home on a regular basis. Not only that, the options are endless! Here are 6 tips for creating totally doable meal plans!

1. Keep it simple
   I'm a foodie at heart and would love to make a 3-course meal every night, but it's just not realistic. We are a family of four on one income. Time is limited, and so is our budget. My goal when meal planning to have an attainable goal set for myself with meals that are affordable, fast, and healthy.

2. Shop the sales
   Every week I look at the sales at my favorite local grocery store and use those ingredients, along with what I already have, to plan my meals. This past week; ravioli, Greek yogurt, fresh herbs, and butter were all on sale. I already had garlic and paprika at home, and that gave me all the ingredients to make Weeknight Turkish Manti. I wanted to add a fresh side dish and saw that tomatoes were also on sale, so I put together a tomato and cucumber salad. The only thing I paid full price for in this meal was a cucumber!
    If you see ingredients that look like they'd go well together but you don't have a particular dish or recipe in mind, check out the ingredient search on AllRecipes.com.

3. Start with produce
   In an effort towards plant-based eating, I look at the produce that's on sale first. That way I start the meal-planing process thinking about the veggies I want to include, rather than making them an afterthought.

4.Warm up to leftovers
   Why do I only plan 3-4 meals a week? Because I only want to take the time to cook 3-4 times a week. This way, I can maximize the savings by making larger batches that will feed us more then once, and I get a few dinner's-already-done nights off! every week!

5. Use what your mama gave you - your slow cooker
   It doesn't always work out, but I try to have a slow cooker meal on the menu once a week. It gives me a sense of accomplishment in the morning that dinner's already been made, and it frees up my time in the evening so I can get more done elsewhere or, on a good day, have some extra downtime with Hubs.

6. Branch out
   When you're trying to eat healthy, quick, and affordable meals, it's easy to find yourself in a rut. Look to cuisines that you are less familiar with and try something new! You could make that tuna casserole ... again, or you could try whipping up some gazpacho or pineapple enchiladas!

Monday Meal Plan: Pineapple Enchiladas

Well, I'm happy to report that Z has made a full recovery and I am finally in my 3rd trimester! The nursery is starting to come together and we're working on our before-baby-arrives to do lists. We've also FINALLY settled on a name, but we are keeping it to ourselves until he's here. (Less uninvited input that way). 

We ended up adding this 20-Minute Minestrone to the menu last week and I'm so glad I remembered it. It's a good, simple pantry meal that comes together quickly!


This week we'll be having:

Lemon Orzo Soup & Greek Salad
Pineapple Enchiladas (recipe below) with Tomato & Avocado Salad
Turkish Manti & Roasted Brussels Sprouts 



Pineapple Enchiladas

Ingredients

  • 1 (20 ounce) can Pineapple Tidbits, drained 
  • 1/4 cup sour cream 
  • 2 cups shredded cheese, divided (I use a Mexican blend)
  • 1 (10 ounce) can enchilada sauce, divided
  • 6 (8 inch) flour tortillas

Monday Meal Plan: Turkey, Pear and Brie Flatbreads


Have you ever had a week that went from normal-crazy, to crazy-crazy, to crazy-insane? That's how this week felt for me.  I won't bore you with the details - but the main event was Z coming down with what we think was scarlet fever. Yeah, it's been real, and it's been fun - but it hasn't been real fun. He's finally feeling much better and I spent most of the day trying to get the house back in order. As a result, we are keeping our meal plan even more simple than usual this week.


Tapas night is something we have come to love and is inspired by Hubs spending part of his childhood in Spain. This week tomatoes, fresh mozzarella, and herbs are on sale - caprese it is!

Monday Meal Plan: Tuscan Bean Soup

So ...

I had a severe case of pregnancy brain this past week.  despite 3 trips to the grocery store within 2 days I somehow still managed to forget ingredients that I needed for last week's meal plan.  As a result, we ended up ordering pizza one night and the tikka masala I had planed was pushed to this week. 

Oh well.

Monday Meal Plan: Hungarian Mushroom Soup

Good morning, all!

I'm sorry for not getting my meal plan up last week! We ended up taking a little trip up to NC for a long weekend and the meal planning sort of fell by the wayside. We had a wonderful trip which I will write about later, but for now, here's the meal plan for this week!



Hungarian Mushroom Soup


I have a soft-spot for mushroom soup ... mushroom anything, really.  I never liked mushrooms until 2000 when I was traveling through England.  We stayed at a bed & breakfast with an attached restaurant and we were served the most INCREDIBLE mushroom soup one night.  I've been a big fan ever since.

Strangely enough, mushrooms were one of the things that I could not tolerate in my first trimester with Z. Thankfully, it didn't last too long and hasn't been an issue this pregnancy!

So back to the soup... This recipe is fairly easy to make and always a crowd-pleaser! It's somewhat comparable to the mushroom soup they serve at Panera's, but I think it's tastier. :)

Meal Plan Monday: Weeknight Turkish Manti

Welcome to another Meal Plan Monday!

It's been a good but crazy week.  This whole pregnant-with-a-toddler thing is no joke! Z is just about to turn 2 years old - and, boy, can you tell. Overnight, he wants to do everything himself.  I'm not sure which one of us is learning more patience - him or me!

Looking ahead to next week, we have two nights that will be largely taken up by a worship band rehearsal and then a Good Friday service.  As a result, I'm keeping the menu fairly quick and simple. Each of these meals only takes 30 minutes at most, and making larger batches ensures that we can have a couple of nights off when it comes to making dinner.

As always, this week's menu is based on what's on sale and we plan to make enough to eat each meal at least twice.







I was looking over the sales for this week and I started to get excited. There are deep discounts on ravioli, Greek yogurt, butter, and fresh herbs.

This can only mean one thing - manti is on the menu.

This Turkish pasta dish features the flavors of beef, garlic, paprika, mint, butter, and yogurt.

Meal Plan Monday: Hearty Spinach Salad

Wow! This month is just flying by! Z will be 2 years old at the end of the March and I am wondering where on earth the past two years went!  It feels like it was just yesterday I was feeling Z kick and do somersaults in my belly, and now his little bother is in there doing the exact some thing. One thing's for sure, the second pregnancy is very different from the first.

The new nursery has a dresser and a crib in it now, but it's still nowhere near ready for the baby to arrive. We're hoping to use some small chunks on time on weeknights to get it cleaned out and start decorating soon.

That said, here's our super simple meal plan for this week:

Slow Cooker White Chicken Chili with Cornbread - In the slow-cooker now. It smells awesome!

Spaghetti and Meatballs with Roasted Broccoli - ALL the ingredients for the spaghetti are on sale - score!

Hearty Spinach Salad with Baguette - Spinach, tomatoes, garbanzo beans, and avocado (not pictured - oops!) topped with sesame seeds and chia seeds and served with an organic dressing. This one by Amy's is my favorite.

Meal Plan Monday: Slow Cooker Irish Stew

Happy Monday everyone!

This week we are going totally vegetarian with our dinner menu, which includes:
Asparagus and Mushroom Couscous with Aunt Ruth's Steak Sauce (recipe to come)
Mexican Baked Potatoes with Chips & Guacamole
Vegetarian Greek Pasta  (recipe to come)

Last week, I made an awesome whole food, slow cooker Irish Stew that's perfect for an easy peasy St. Patrick's Day dinner! After all, the best way to celebrate holidays is with food! Just wait til you see what I have planned for Arbor Day. ;)

Monday Meal Plan: February 28

Happy Monday!

I'm keeping the meal plan nice and easy this week. The pollen count in our area has been off the charts, and as result we are all feeling pretty lousy. Hubs also has a short business trip this week, so my MIL is going to helping out some. She'll be watching Z when I finally go to the chiropractor for an exam and adjustment. Woohoo!

Blueberry Basil Flatbreads - I know, we just had these last week ... but they are seriously so good and easy to pull together. Plus, I've told my MIL about them but I haven't had a chance to make them for her yet!

Meal Plan Monday: Feb 22

Happy Monday!

I am so excited about our meal plan this week. Hubs has been talking about having these gorgeous blueberry basil flatbreads for about a while now, and this week the main ingredients are on sale! Our store is also having an Italian sale this week, sale we put a pasta dish on the menu as well.



The menu for this week includes:
Blueberry Basil Ricotta Flatbreads
Chicken Yakisoba
Pasta with Rappini and Sausage and a Caprese Salad

Monday Meal Plan: Feb 15

This past week seemed to fly by!  I hope everyone enjoyed Valentine's Day and is enjoying their holiday weekend! We used a gift card and had a candle-lit Italian carry-out dinner - no cooking or dishes for me! My husband had today off so we took a family trip to the zoo. Z had a ton of fun scaling a climbing wall at the zoo playground and I think his favorite animal encounter of the day was a tie between the baby gorillas and a very brave squirrel.

This coming week is a day shorter for us and we have one night when we'll be at a farewell dinner for some missionary friends of ours, so I only have two meals planed out.

The menu for this week includes:
White Chicken Chilli with Cornbread
Southern-Style Lasagna and Spinach Salad

Meal Plan Monday:

This past week was busy but a ton of fun! Despite having Bible study, moms group, a bonfire with friends, working to clear out the soon-to-be nursery, and a family gender reveal (it's a boy!) - we managed to stick to or meal plan pretty well! The Thai pumpkin noodles I made lasted us longer than we expected and we never made the lasagna, so I've just moved that meal to this week's meal plan.

The menu for this week includes:
Mushroom Soup with Spinach Salad and Bread
Greek Flatbread
German Knockwurst and Sauerkraut Stew
Southern-Style Lasagna and Spinach Salad

Meal Plan Monday: Healthy Taco Salad

Welcome back to Meal Plan Monday!

Now that I can stomach real food again, I have been in a serious cooking mood.  As always, the dinners are based on what's on sale, and what I already have on hand from previous sales.

Last week's menu included:

   Sidenote: I recently found this salad recipe from BudgetBytes.com and it is so quick and yummy! It was a nice balance for the tikka masala, and it satisfied a serious green pea craving. :)
