Monday Meal Plan: Turkey, Pear and Brie Flatbreads


Have you ever had a week that went from normal-crazy, to crazy-crazy, to crazy-insane? That's how this week felt for me.  I won't bore you with the details - but the main event was Z coming down with what we think was scarlet fever. Yeah, it's been real, and it's been fun - but it hasn't been real fun. He's finally feeling much better and I spent most of the day trying to get the house back in order. As a result, we are keeping our meal plan even more simple than usual this week.


Tapas night is something we have come to love and is inspired by Hubs spending part of his childhood in Spain. This week tomatoes, fresh mozzarella, and herbs are on sale - caprese it is!

Turkey, Pear & Brie Flatbreads

Yield: 2 Flatbreads

Ingredients:

Naan Bread (one package of two)
1 wedge of Brie, sliced and trimmed
1/8 lb. Smokey Sliced Turkey, chopped or pulled
1 Pear, organic, sliced
1/2 cup Shredded Italian Cheese (optional)
Dried Tarragon (optional)
Salt and Pepper, to taste
1 Tbs Mustard
1 Tbs Honey

Directions:

1. Preheat oven to 425 F
2. Place the naan on a lined or non-stick cookie sheet and add a layer of brie, followed by a layer of turkey, and then the pear. Sprinkle a little shredded cheese on top and add a dash of dried tarragon. Season with salt and pepper. 
3. Bake for 11 minutes or until the cheese on top starts to get golden brown. Meanwhile, combine the mustard and honey in a small bowl. 
4. Once the flatbreads are done, remove from the oven and drizzle with the honey mustard. 
5. Enjoy!
