Simple Tortellini Soup

This super simple tortellini soup is one of my favorite "pantry meals", and especially comforting when you aren't feeling well.  It's a simplified adaptation of a soup that my mother-in-law made for us while I was recovering from my C-section with  Z.  I love that I can dump all the ingredients in a pot, take Z through his bedtime routine, and dinner is ready by the time he's down!


Ingredients:
1 Tbs EVOO
2-3 Tbs minced garlic
Two 32 oz cartons of vegetable or chicken broth
10 oz bag of organic frozen spinach
20 oz container of frozen tortellini
Italian herb blend, to taste
shredded mozzarella or Parmesan to serve (optional)
Directions:
1. Heat the EVOO and minced garlic in a large pot over medium heat.
2. Add the broth, tortellini, and spinach to the pot. Stir and bring to a boil.
3. Reduce heat and let soup boil gently until the pasta is cooked through (about 15-20 minutes). Season to taste, top with some Italian cheese if you like, and serve with crusty bread!
